This Wednesday, the country's first-ever national food truck brand will launch its first mobile kitchen in the Dallas Arts District: The Butcher's Son, serving "hearty fare" featuring Johnsonville Sausage. The sausage company has partnered with the Pool Restaurant Group (which already franchises Gandolfo's trucks) to launch the truck first in Dallas, then to expand. In September, Pool Group CEO Dan Pool told QRS:
“I was scared at first, because I know the food-truck culture is, I don’t want to say anti-corporate, but it’s along those lines,” Pool says, noting that major food corporations have launched promotional trucks that fizzled. “We don’t want the food-truck community to go, ‘Oh my gosh, a corporate truck,’ because we’re really not.”Indeed, the company seems to want to downplay their corporate roots, calling themselves a "a Dallas-Fort Worth area food truck" in a press release even though Pool's is based in Georgia and Johnsonville is out of Wisconsin. However, local guy Randy Wolken, who already runs the Gandolfo's truck(s) in Dallas, will supervise the Butcher's Son here in town. Their grand opening is Wednesday from 11 a.m. to 1:30 p.m. in the Arts District, and the first 25 customers get a free menu item and a wristband for weekly specials.

(DALLAS, TEXAS) Oct. 3, 2011 – Dallas foodies can now obsess over a new food truck, The Butcher’s Son, which will serve family recipes from famed Johnsonville Sausage. The Butcher’s Son will launch two food trucks in the Dallas area on Wednesday, Oct. 5, driving throughout the city morning, noon and night, offering daily deals and tweeting its location. The first stop of the food truck will be from 11 a.m. – 1:30 p.m. Wednesday, Oct. 5, in The Dallas Arts District.
Created by Jonathan Wagner, son of Johnsonville Sausage Owner and CEO Ralph C. Stayer, in partnership with Dain Pool, of Pool’s Restaurant Group, the trucks will offer a wide range of delicious made-to-order menu items for prices ranging from $3 - $7. The Butcher’s Son will serve breakfast, lunch, dinner, dessert and late-night bites to DFW’s most popular spots.
Menu items include sizzling South-of-the-Border chorizo breakfast sandwiches, The Longhorn beef sliders and The Butcher’s Son’s version of the stuffed bell pepper – The Sergeant Pepper. This unique dish features brown rice, savory Johnsonville Italian Sausage, hand-picked tomatoes, fresh onion, garlic and melted mozzarella cheese. The Butcher’s Son also offers southern-inspired favorites and items like zesty Lime Fries and a variety of decadent “Cake Pops.”
“Over the years, I’ve watched my father’s passion for making only the highest-quality sausage. I am thrilled to continue his legacy by bringing that great-tasting sausage to DFW in a whole new way – through these two food trucks that specifically cater to what DFW locals crave with freshly cooked, on-the-grill style meals,” said Wagner, owner of The Butcher’s Son. “We know people in the Dallas area know good food, and that’s why we’ve chosen this as the only place we’re launching the truck at this time.”
