Chef Troy Walker is "moving on" from his gig at The Ranch At Las Colinas, one of several restaurants from the Front Burner group, which also owns Twin Peaks and Whiskey Cake. Eater Dallas spotted their job listing earlier this morning and got in touch with Front Burner's Jack Gibbons, who says they're looking for a "Texas proud" chef to take over at The Ranch. Front Burner Restaurants in Addison, Texas, is seeking an experienced Chef de Cuisine for a uniquely stylish and critically noted high-volume restaurant in North Texas that specializes in using locally and regionally-sourced ingredients to prepare gourmet dishes that appeal to a wide variety of guests. The chef will supervise a kitchen staff of more than 30 while continually assisting in the development of the restaurant’s quarterly seasonal menu, which focuses on regionally inspired contemporary cuisine.Gibbons says "everything at The Ranch is scratch," which is why they're hoping to find "somebody who already has relationships with ranchers and farmers," or better yet, "somebody who probably grew up on a farm." When it comes to locally sourced, farm-to-fork menus, Gibbons says "everybody says they're doing it," but at The Ranch, they need someone who can walk the walk: "What we want to do is continue to push a thoughtful Texas menu."
