Those gluten-free in the northern 'burbs can rejoice.Candace Carlisle of Dallas Business Journal reports Carrollton-based Local Oven is opening up a gluten-free bakery at Midway Road and Trinity Mills Boulevard come January. Though the bakery will employ less than six employees at its launch, it will supply what founder Linda Fitzerman promises will be tasty breads and treats to groceries, hotels and other businesses.
