Redfork Offers Wood-Fired, Artisanal Pizzas

redfork.jpgFirst Il Cane Rosso, then Dough, now RedFork Tavern: fancy pizza is a hot ticket in Dallas this days. Knox-Henderson's RedFork Tavern has installed a 6,000-pound wood-fired pizza oven that's ready to bake starting today, reports Mike Hiller over at EscapeHatchDallas. Setting sail on a new path without Jeff Harris and Matt Balke, the gastropub will allow patrons to "build your own" breakfast pizza as well as serving pies with house-cured meats. Says new chef Ryan Carbery: "Ultimately, we are going to have a lot of fun with the oven and who knows, we may even use it to heat some late night tacos or gyros." [EscapeHatchDallas]
