Graham Dodds has left Bolsa (replaced by Chef Jeff Harris, formerly of RedFork Taven) and talks to SideDish about his future plans. Maddengly, Dodds keeps it vague, saying that he wants a "small restaurant with a small kitchen" that will probably not be in Oak Cliff, 'cause dude's gotta pay a mortgage. He says the new place's philosophy will be similar to that of local, organic-friendly Bolsa. He says his gig there was a "great three-year run." [SideDish]
