Pizzeria Uno is set to open 30 franchises of its mini-doppelganger Uno Dué Go in Texas, its "largest franchise deal in its 68-year history," according to a press release sent out yesterday. Uno Dué Go is only a three-year-old experiment in fast-pizza'ing, but its success in D-FW International Airport and a couple of Midwestern college towns has inspired the company to take the stores Texas-wide. The franchises will "focus on organic, natural and locally-sourced ingredients." The press release goes on to say that Uno's "intense focus on nutrition and caring for guests with food allergies" means each Uno Dué Go location will feature an electronic kiosk with with menu items and ingredients.
