The guys behind Restaurante Luna's are hoping to open a quick-service version of their Harry Hines restaurant in the UT-Southwestern cafeteria, reports the Dallas Business Journal. Fernando Luna's grandmother started making tortillas for sale in 1924, and the family has expanded their legacy into a $1 million business, including Restaurante Luna's, which opened earlier this year. They're "on the short list" for the last spot at UT-Southwestern, which should be decided in the next month. [DBJ]
