Here's a look inside Cook Hall, the new "modern American gastropub" inside the W Dallas that's set to officially open on Tuesday. Cook Hall replaces Tom Colicchio's Craft, which shuttered back in September, and will offer a casual menu (oysters, charcuterie, sliders) alongside a sophisticated cocktail program.
The kitchen is led by chef Rick Graff, who cooked at Craft before moving up to banquet chef at the W. Head barman Kyle Paris comes fresh off a five year stint at Jasper's; Paris will rely heavily on seasonal produce from the farmers market to concoct ingredients like Bartlett pear bitters for his fall cocktail lineup.
