Yesterday Eater relayed the news that Chad Kelley, formerly of the Meddlesome Moth, had stepped in to take the reins at Cafe Pacific. Seems the cooking at the 30 year old Highland Park Village institution has gone downhill, and it's been the subject of some major criticism in recent months—most notably from Leslie Brenner, who was not at all impressed by the way the kitchen handled the (rather expensive) seafood. (Scott Reitz wrote of a "decent" crabcake, but overall found the restaurant "overpriced and uninspired".)
Now Brenner offers a voyeuristic peek at an email exchange between new chef Kelley and owner Jack Knox in which they discuss how to "get things back on track", as well as how to implement the new "Steakhouse style" they've apparently got planned for Cafe Pacific. Kelley also details his plans to get on the horn to displeased regulars and invite them back in to try the soon-to-come new and improved menu.
