According to a staff member, Stampede 66, the new mega-Texan restaurant from celebuchef Stephan Pyles, will officially open next Monday, November 5, rather than today as previously announced. Eager Dallas diners will have to wait just a little bit longer to sample Pyles' upscale-but-downhome fare like tacos boasting tortillas made from house-ground corn, Frito pie with housemade Fritos and "canned" chili, and freshly fried chicharrones.
