Chef Jon Bonnell of Fort Worth's Bonnell's Fine Texas Cuisine will transform the Bailey's Prime Plus on West 7th into Waters, a seafood restaurant (duh) with an emphasis on sustainable, "eco-friendly" fish. Waters is expected to open in February of next year and, according to Chef Bonnell, will be "Fort Worth fancy"--tuxedos and cowboy hats, perhaps? [SD]
