jvalsm.jpgLone remaining Dallasite/FT33 pastry chef Joshua Valentine continues to run in the middle of the Top Chef: Seattle pack, despite a solid showing last night; forced out of his culinary comfort zone, he prepared a clever modern take on balut (an Asian delicacy in the form of a fertilized duck egg) that prompted judge Gail Simmons to declare "I'm kind of in love with Josh's dish." Perhaps a free-range, farm-to-table balut will pop up on FT33's menu soon? [Bravo]
