The arrival of a new year brings promising news for barbecue fiends: Teresa Gubbins reports that lovable grump/burger master/Maple & Motor owner Jack Perkins is slated to open barbecue joint Slow Bone in the Design District in late February.
Perkins showed his barbecue chops when he won the brisket competition at charity fundraiser MeatFight in November with a luscious hunk of cow smoked using his preferred "fast and hot" method. Joining him at Slow Bone will be MeatFight pulled pork victor Eric Hansen, who's done time in the kitchen at Cane Rosso.
Slow Bone will take over the BW's BBQ spot across from Tristan Simon's smash hit lunch spot Off-Site Kitchen. Besides "brisket, pulled pork, burnt ends, ribs and sausage", the 'cue joint will also offer a variety of vegetarian-friendly sides.
This isn't Perkins first foray into something besides burgers—he opened OcaTaco at UT Southwestern in early 2012, but it quietly shuttered shortly after opening.
