Barbecue expert Daniel Vaughn interviews pitmaster Travis Mayes of Meshack's Bar-Be-Que in Garland. In regards to the smoke-stained walls in the pit room, Mayes had this to say: "The health department takes off a point if you have smoke on the walls. I just go ahead and give them that point.
