DMN critic Leslie Brenner checked out the just-opened bar at The Establishment this weekend: She describes a "very cool-looking, low-lit cocktail den" where cocktail menus are eschewed; instead, bar wizards Michael Martensen and Omar Yeefoon will custom-blend a libation to your liking behind a bar that "looks like a stage". There's even an amuse in the form of a champagne cocktail. The biggest surprise of all?
