If you're one of those people that complains about the "soggy" pizza at Cane Rosso and yearns for a crisper crust, owner Jay Jerrier has some words for you. An addendum at the bottom of the menus for the soon-to-open White Rock location (and soon, the Deep Ellum location's menus as well) explains the phenomenon of "tip sag" — which isn't nearly as perverse as it sounds, promise — in Neapolitan pizza, and explains that "not being able to hand-hold your slice is a small price to pay" for what many have declared the city's best pizza, and "what some random girl on Yelp declared the 'worst pizza ever'".
Anyone still not charmed by the Neapolitan pies will probably be more pleased with the offerings at Jerrier's upcoming New York-style pizza joint in Oak Cliff, Zoli's, which he's basically described as the antithesis of Cane Rosso.
