Created specially for Eater Burger Week is this creation brought to you by Chef John Tesar of Spoon Bar & Kitchen. The Knuckle Sandwich offers a slab of crispy pork belly topped off with fresh lobster knuckles and garnished with compressed heirloom tomato slices, Little Gem lettuce, and Russian dressing made with Japanese Kewpie mayo. It's served not with French fries but with ultra-fancy pommes soufflé, artfully tourneed potatoes with crisp exteriors and airy insides that quite obviously need no ketchup. This beauty is available at the bar at Spoon this week for $18.
