The Paleo sect and Crossfit-obsessives will be thrilled to hear that long-awaited HG Sply Co. (that's pronounced "supply", for the record) will open its Lower Greenville doors next Tuesday with plenty of meat, meat, and more meat. The Paleo-influenced menu, which includes things like bacon-wrapped pork shanks, big ol' slabs of beef, and plenty of green vegetables like Brussels sprout chips and broccoli with bacon, is largely sourced locally (and organic when possible), with meats from purveyors like Local Yokal and Windy Meadow Farms and roughage from Tom Spicer's FM1410, according to a press release.
Besides plenty of meat and veg, expect specialty cocktails (including a Moscow Mule concocted with ginger kombucha) made with "no added sugars" or pre-made mixes, and plenty of local beer on draft.
Chef Paul Niekrasz hails from Chicago, where he most recently cheffed at One North Kitchen & Bar. HG Sply Co. will be open only for dinner at first, with plans to add lunch service at the beginning of June.
