The hunters and gatherers behind HG Sply Co. debut their long-awaited new restaurant tonight on a stretch of Lower Greenville that's witnessing some rapid revitalization (Brooke Humphries' hip coffee bar Mudsmith opened several doors down back in January, and Trader Joe's is preparing to open its first Dallas location just across the street, while a food truck park is slated to open sometime this summer).
With a menu heavily influenced by the Paleo diet (think plenty of meat including steaks and bacon-wrapped pork shanks, and vegetation like curried cauliflower and Brussels sprout chips), the new dining option will surely be a big draw for devotees of the popular "caveman diet". A rooftop deck will hopefully be open by this weekend.
