The votes have been tallied and the results are in: The first incarnation of Kitchen LTO, the "permanent pop-up" at Trinity Groves that will rotate chefs and concepts every 4 months, will be cheffed by Norman Grimm and designed by Coeval Studio.
Neither of these names will be unknown to the city's food-obsessed, though; Grimm most recently cooked at Acme F&B before it switched concepts to a more casual beer garden format (he also did time at long-lost York Street and The Mercury). Coeval is John Paul Valverde and Miguel Vicens, the duo that's been responsible for several of the city's most eclectic dining rooms including Belly & Trumpet, Sunset Lounge, and Outpost.
Grimm's plan for the menu is "modern French/American cuisine." His proposed menu displayed at the recent Kitchen LTO event included dishes like red wine-braised oxtail with orzo, rabbit confit salad, and a sake-glazed pork belly. Curious diners will have to wait until the restaurant opens for business on September 3rd to see how it all comes together.
