Velvet Taco's latest WTF (that's "weekly taco feature") will honor Rusty Taco founder Rusty Fenton, who passed away recently after a long battle with cancer. According to VT, "the Rusty Taco will be a house made corn tortilla with slow roasted achiote pork shoulder, avocado crema, grilled pineapple, queso fresco, fresh cilantro and pickled red onions." Half of the proceeds from every Rusty Taco sold will be put into an educational trust fund for Fenton's daughters. The taco is available today through Sunday. [Eaterwire]
