Sweet news from the Malai Kitchen camp: The West Village's Thai-Vietnamese restaurant is in the process of acquiring its brewpub license, with an end goal of brewing its very own Vietnamese-style beer.
According to Malai PR, "It will be a house-brewed Bia Hoi, an unfiltered, inexpensive beer that is rarely found outside of northern Vietnam. Using a combination of rice and barley for the grains, it's brewed quickly at a cool temperature resulting in a light flavor and texture."
The brewpub application is still in the works, but Malai hopes to have the beer-brewing operation up and running by the end of the year.
