Eureka! to Unleash Pop Rock-Adorned Salads on Uptown December 8

The Cali export is also bringing 40 craft beers on tap and bone marrow burgers.

California-based Eureka! is preparing to open its fourteenth location — and first in Texas — at the West Village's new 3700M building come December 8, says a press release. According to said release, Eureka! (exclamation point apparently necessary?) is "known for its expansive American selection of craft beer, small batch whiskey, regional wine, and locally-sourced ingredients."

As far as the food goes, expect to see an extensive lineup of burgers — including the oh-so-trendy bone marrow burger — alongside healthier items like a roasted beet salad, this one made with walnuts, apple, arugula, and, strangely, watermelon pop rocks. The press release also reference "osso bucco riblets" and an "all day breakfast burrito" with flat-iron steak. (A glance at the menu for the Bakersfield, California location also includes honey-cinnamon sweet potato fries, fried chicken sliders, and a burger with guacamole and spicy chipotle sauce served on a flour tortilla.)

Design-wise, they're aiming for the currently omnipresent rustic-industrial look, replete with reclaimed wood from old barns and distilleries, a "mesmerizing interior fountain" (oooh), communal tables, and a "lush[ly] landscaped" patio.

The 3700M building will also be home to fellow California-based chain Public School, a vaguely classroom-themed gastropub slated to open sometime this winter.
