It's the dawn of a new era at Hotel Palomar: John Tesar's highly anticipated modern steakhouse Knife now has signage — replacing the sign for Central 214, the restaurant once cheffed by Graham Dodds.
As Knife gears up for a late April opening, the hotel is pushing the new restaurant hard to its email subscribers, offering promos like the "Knife: Prime Experience" package, which includes a night in a luxury suite, cocktails, spa treatments, a "special three-course dinner for two" at the restaurant, a "tableside visit" from Tesar himself and mindblowing take-home swag in the form of an autographed cutting board. No mention of any possible selfie opportunities with the chef, but those are (probably?) free.
