Surprise: Chef Stephan Pyles' brand new pan-Latin restaurant San Salvaje opens tonight, the chef announced on Twitter just minutes ago. As a note on the menu explains, San Salvaje means wild saint, and the restaurant "celebrat[es] the union of Pagan indigenous culture and hosts of revered Saints in Latin America," showcasing foods from Argentina, Brazil, Ecuador, Peru, Mexico, Central and South America, Cuba and the Caribbean, with Pyles-style modern Texas twists — think foie gras tacu tacu, "modern" ropa vieja, feijoada with heirloom beans and braised pork cheek, smoked duck tacos, crab arepas with Texas grapefruit and huitlacoche empanadas.
