First a nightclub transforms into a gourmet popsicle shop, and now this: The rapid gentrification of Lower Greenville continues with the impending arrival of Village Baking Co., which Lakewood Advocate reports is moving into the space recently vacated by head shop Pipedream (next door to Blind Butcher).
The bakery, which provides baked goods for a slew of Dallas restaurants, currently has an existing retail location at Greenville and University; besides artisan breads like pain au levain and baguettes, VBC also puts out some mighty fine French pastries including croissants and the hard-to-find caneles and kouign amann. If the Lower Greenville location observes the same early-morning hours (the current retail location opens at 7 a.m.), expect it to be a popular breakfast destination.
