Potatoes Will Be Flattened Tomorrow at Trinity Groves

Another new Trinity Groves debut is on the horizon: Phil Romano's brainchild Potato Flats will open Tuesday at 11 a.m. in the space behind Casa Rubia. Potato Flats is pretty much exactly what it sounds like, low-carbers be damned: A fast-casual, Chipotle-style assembly line that showcases baked potatoes (and sweet potatoes) that are flattened to an inch or so thick before being topped with various ingredients. Vegheads might be a little disappointed in the vegetable selection, which includes just a few run-of-the-mill options (what, no kale?). There is a chopped salad that comes with interesting-sounding "potato croutons," though.

Other upcoming Trinity Groves projects to keep an eye on include the soon-to-open Kate Weiser Chocolate; Saint Rocco's, an Italian restaurant that's also from Romano; Sushi Bayashi; DiDi's Tamale Diner; SocialBrew, a kombucha bar; Cake Bar; a new project from Casa Rubia partner Jonn Baudoin called Sugar Skull Cafe; and of course, the new location of burger mecca Off-Site Kitchen. With another phase of construction set to begin at the mega-development in early 2015, expect plenty more restaurants to be announced in the near future.

Potato Flats will be open 11:00 a.m. to 9:00 p.m., seven days a week.
