Smoked meat mecca Pecan Lodge hardly needs an introduction at this point. Owners Justin and Diane Fourton have more or less conquered the Texas barbecue scene in just a few years, and since moving on up to their fancy new Deep Ellum digs in May, they're serving more brisket, beef ribs, pulled pork and sausage than ever. Eater National talks to the Fourtons about their rise to barbecue greatness and gets in the smokehouse to find out how they're making consistently perfect brisket day after day.
