Chef Randall Warder is a busy man: Besides preparing to open Clark Food & Wine Co. on Lower Greenville, he's also working on a second restaurant called C'Viche Tequila Bar that will be located right next door, says CultureMap's Teresa Gubbins.
Warder, who was chef de cuisine at The Mansion on Turtle Creek during the Dean Fearing era, tells CultureMap the concept was inspired by time spent working at a Rosewood hotel in the Baja California region of Mexico. The restaurant will showcase several different varieties of ceviche (natch) that can be served up in various iterations including salads, tacos, quesadillas or straight up. On the bar side of things, expect "mojitos, caipirinhas and margaritas," sangria and South American and Texas beers.
