The State Fair of Texas is known far and wide for its deep-fried absurdities, and somehow, each year they manage to outdo themselves. In addition to the Deep-Fried Sriracha Balls, funnel cake-flavored beer and other creations that made it to the coveted Big Tex Choice Awards, there will be plenty more ridiculousness on offer at this year's fair, including yes, Deep-Fried Sweet Tea. So how does one deep-fry a beverage, exactly? According to the Fair's website, the tea is made into a thick custard before being crusted with crushed graham crackers, fried and then drizzled with sweet tea syrup. Sounds... sweet.
If that's not quite gut-busting enough for you, there's also the somewhat terrifying-sounding Biscuit Fries With Chocolate Gravy, which are fried strips of biscuit dough "served with a bowl of warm, delicious milk chocolate gravy." Eeek.
Proving that the State Fair is more than hip when it comes to staying up on the latest internet slang (or something), this year they'll be serving something called Fried Chocolate Maple Bacon Amazeballz. Brought to you by Plano bakery Amazeballz, this confection batters and fries cake balls before topping them with chocolate syrup, maple syrup, crumbled bacon and powdered sugar. Of course, it's not all tooth-achingly sweet stuff: The Atkins crowd will be pleased to witness the debut of Deep Fried Pork Rind Nachos, freshly fried pork skins topped off with "gourmet" cheese (sure), chili, pico and jalapenos.

Polynesian Pop – Pieces of chicken, pineapple, red bell pepper & onion alternated three times on a stick, dipped in a zesty batter mix & deep fried to golden brown. The finished product is basted with a yummy, citrus Polynesian sauce.
Hot Soul Cake – A Southern Soul delicacy that's sure to melt in your mouth and soothe your soul. A deep fried savory chicken bite that has been sprinkled with TT's Fairy Dust (a savory seasoning) and stuffed along with cream cheese into the soul of a rich cream cheese and vanilla infused cupcake. The cupcake is dipped in a slightly flavored waffle batter and deep fried until golden brown. To top it off, the cupcake is then sprinkled with powdered sugar and drizzled with a cream cheese glaze.
Deep Fried Stuffed Gordita – A handmade gordita stuffed with beef fajita and frijoles a la charra, then deep fried to golden perfection and topped with a crispy, lime cabbage slaw, queso fresco, and finally drizzled with a mouth watering avocado crema sauce.
Pioneer Kettle Corn – A light, sweet and even gluten-free food perfect for snacking while strolling down the Midway. [Ed. note: Is Kettle Corn really new to the State Fair?!]
Deep Fried Smoked Brisket – 12 hour smoked brisket is sliced, dipped in a buttermilk egg wash, then dipped in seasoned flour, re-dipped in egg wash, and coated with a seasoned Panko breading and deep fried. Served with a fried smokehouse onion ring, BBQ sauce, and pickle slices. Can be ordered spicy or regular.
Cowboy Burrito - Skillet Potatoes (red potatoes, onions, bell peppers, tomatoes, Texas Skillet seasoning), shaved sirloin steak, and cheese rolled in a 10 inch tortilla and grilled on our giant skillet.
Texas Fried Chicken in a Waffle Cone – This tasty treat starts with a large crispy waffle cone layered with Texas Fried Chicken and Sausage Gravy until its piled high and when you get to the bottom of the cone you have a sweet surprise. You get a meal and dessert all in one. Enjoy!
Apricot Chamoy Empanada – Smooth, tangy, sweetened apricots are paired with the tartness of lime and slight spiciness of ground chili peppers in a Chamoy Sauce. This Latin America-inspired sweet and salty filling is wrapped in a buttery pastry, deep-fried to a golden brown and dusted with powdered sugar.
Deep Fried Milk and Cookies on a Stick – Whole milk, half & half and heavy cream are blended with sugar, cookies and slow cooked to make a creamy custard that is chilled for 6+ hours. The finished milky/creamy product is then sliced in thin sections, dipped in an egg wash and rolled in Japanese Bread Crumbs. It is then deep fried and served hot with a sprinkling of powered sugar and choice of chocolate or strawberry sauce.
