Two Pork-Centric Pop-Ups; Get Your Souffle On

MAPLE—Lucia sous chefs Justin Holt and Mike Gibson will host a porchetta pop-up on Sunday, September 14 at the Windmill Lounge. $20 gets you a plate of Red Wattle porchetta, sides and a craft cocktail; it begins at 6:30 p.m. and runs till the meat sells out. [EaterWire]

OAK CLIFF—Holt and Gibson will host a second pop-up on Sunday, September 21 at Oak Cliff Social Club (again, from 6:30 p.m. till sold out). This time around $20 gets you roasted whole Ossabaw hog and fresh sausage along with sides and a beer. [EaterWire]
