French Pastry Haven Village Baking Co. Now Open on Lowest Greenville

Prepare to carb-load.

Here's a glance inside the new boulangerie from local bread and pastry mavens Village Baking Co., which opened bright and early at 7 a.m. today. Located on Lowest Greenville Avenue right next to the Blind Butcher, it's a pretty remarkable transformation for a building that used to be a head shop.

With hours from 7 a.m. to 7 p.m. daily, VBC will cater to early-morning commuters with espresso and croissants; for lunch, there's an assortment of sandwiches like the jambon beurre (ham, cheese, and butter on a freshly baked baguette — tres Parisian). And if you need to swing by after work to grab a little something sweet, look no further than the sublime mini chocolate truffle cakes. Other menu standouts include crispy-on-the-outside, custardy-inside caneles and the sweet flaky pastry known as kouign amann, which is much easier to eat than it is to pronounce.
