FORT WORTH—Tim Love's Woodshed Smokehouse now sells its pitmaster fat to go. What, exactly, is pitmaster fat? A mixture of all the drippings from the restaurant's various meats (think cabrito, pork, beef, and lamb) that's then strained and seasoned with a spice rub.
