Dagwoods Grinders Bringing Formidable Sandwiches to Fort Worth

Chef David Hollister is behind the new concept.

If you live or work in west Fort Worth, there's a new sandwich shop in your very near future. Dagwoods Grinders and Growlers is the brainchild of chef David Hollister, previously of Gas Monkey Bar & Grill and Yucatan Taco Stand. Then again, based on the looks of the menu, this one sounds like it might be worth traveling for.

The term "dagwood" of course comes from the old comic strip Blondie, in which a beady-eyed character by the same name was always eating ridiculously tall sandwiches. Per photos posted to Facebook, it looks like Hollister is doing his best to emulate those towering creations at his new sandwich shop near Ridgmar Mall:

THIS amazing creation is the BLT -- hearty Grilled Sourdough Bread pilled high with Cherrywood Smoked Bacon, Burrata,...

Other sandwiches on the menu include:

  • Beef Belly: house-cured Akaushi beef bacon, Beemster gouda, and balsamic onion jam on marble rye
  • Reuben: house-cured and grilled Akaushi corned beef, housemade sauerkraut, Sriracha thousand island, and Swiss on marble rye
  • The Dagwood: Akaushi tri-tip, beefsteak tomato, Maytag blue cheese, crispy leeks, fried egg, smoked rosemary aioli, and bone marrow jus on grilled sourdough
Based on the "and Growlers" part of the name, it's safe to assume Dagwoods will also be serving plenty of craft beer. The sandwich shop has yet to announce a official opening date, but the Facebook page promises it's "just a few days away." (And yes, there will be gluten-free bread available as well as at least one vegetarian option.)
