A new addition to culinary theme park Trinity Groves is just weeks away: Saint Rocco's will open its doors on Thursday, September 10.
The brains behind Saint Rocco's is none other than Trinity Groves founder Phil Romano, who is of course also the founder of the Romano's Macaroni Grill chain (not to mention Fuddrucker's and numerous other concepts). For Saint Rocco's, he's partnered with Eatzi's corporate chef Jay Valley. Romano is quoted in a press release as saying he intends Saint Rocco's to be "a destination restaurant."
Don't expect authentic trattoria fare, however: Saint Rocco's, which will be open for dinner only, specializes in New York-style Italian food. What will that translate to, exactly? No specific menu items have been named yet, but at a preview event held a whopping two years ago, Saint Rocco's served three-cheese ravioli with truffle butter sauce, braised short ribs with Chianti-horseradish sauce over polenta, and ricotta cheesecake with Drambuie creme anglaise. Local blog Escape Hatch recently reported that there will be handmade pastas, roasted meats, and charcuterie (no pizza, however).
Saint Rocco's is currently hiring for both front and back of house positions; anyone interested should email general manager Patrick Mailley at pmailley@saintroccos.com.
