After a few months with Chef Julio Peraza at the helm, Proof + Pantry has made an exciting new chef hire. Announced today, Chef Anthony Bombaci will now lead the kitchen at the One Arts Plaza restaurant.
Before coming to Proof + Pantry, Bombaci earned five stars from the Dallas Morning News at now-shuttered Nana in the Hilton Anatole Hotel. He has also worked at the Dining Room at the Ritz-Carlton San Francisco, along with The Newport Room and Enoteca Bombaci at Hotel Arts in Barcelona, Spain.
The departure of Kyle McClelland (who recently left Dallas for the East Coast) meant that Peraza, who was hired to serve as Executive Chef at Madrina, Proof + Pantry’s sister restaurant in Oak Lawn, had been leading the kitchen at both restaurants. Now, he’ll get a bit of a break as Bombaci brings his impressive resume and years of kitchen experience to Proof + Pantry.
“I’m thrilled to join Proof + Pantry and the Misery Loves Company team,” said Bombaci. “This partnership is a perfect match as I get to have the best of both worlds – continuing the culinary prowess of one of Dallas’ best restaurants and working with the team to bring new projects to fruition.”
Misery Loves Company co-owner Sal Jafar II was equally enthusiastic. “Bombaci is one of the most talented chefs we’ve ever seen,” said Sal Jafar II, partner and co-founder of Misery Loves Company in a statement. “We are pleased to have him on board to usher in new culinary creations at Proof + Pantry, and we plan to utilize his expertise as we move forward with new concepts in the future.”
