The restaurant amusement park that is Trinity Groves has plenty of options, but the neighborhood has lacked a dining option for people who follow a plant-based diet. That will all soon change as V-Eats Modern Vegan makes its debut next month.
The much-anticipated, 100% vegan restaurant has largely kept mum on its progress, but a post to V-Eats’ Facebook page indicates that it will open at some point in October. Signage went up at the restaurant earlier in the month, and Gardner has been catering events over the past several weeks ahead of his new spot’s impending opening.
Over the past few weeks, the Facebook page has featured dishes from Chef Troy Gardner forthcoming menu, like artichoke & (vegan) sausage pizza, a platter of meat-free “southern comfort” sides, tapas, and a bevy of fresh salads. Perhaps the menu will also include some familiar favorites from Gardner’s now-shuttered Samson’s Hot Dogs concept.
