We now have the opening date for Chicken Moto in Richardson: February 22. They’re starting with dinner service for the first week (opening at 5pm, daily) and then opening as usual at 11am from there on out. The restaurant can best be described as a mash-up of Texas comfort food and South Korean Seoul food — focused almost exclusively, as the name suggests, on chicken.

Chicken Moto comes from wife/chef duo Sandy and Greg Bussey as well as Steve Shin and Sam Osee — all of bbbop Seoul Kitchen, which has three locations throughout Dallas.

As per a release, the team explains the thinking behind focusing on chicken: once it was added to the menu at bbbop, it became a best-seller. Makes perfect sense to open a new venture with that focus in mind.

Diners can choose from a variety of starters — think edamame, elote, kimchi queso(!) — and a handful of salads, while the main attraction is definitely “the bird,” a choice of quarter dark or white, half a bird or a whole chicken. Chicken can be flavored with soy ginger, sweet and spicy chili or come un-sauced.
