After more than four years in the kitchen at Lark on the Park in Downtown, chefs Melody and Dennis Bishop are switching gears entirely with plans to open a French-inspired restaurant on Knox Avenue.

The married team of chefs will join Le Bilboquet owner Stephan Courseau to open Up on Knox, described as an “American brasserie,” reports CultureMap. The new restaurant will occupy the former Chili’s space on Knox Avenue, which closed its doors after 20 years in the neighborhood early last year.

As far as the menu is concerned, look for plenty of California influence from the Bishops to intertwine with French classics, but no concrete details have been established on exactly what Up on Knox will serve just yet. There will, though, be an oyster bar, likely piled high with plenty of West Coast bivalves.

As for Lark on the Park, which the Bishops left back in April, owner Shannon Wynne still hasn’t found the right chefs to take over. “In this era of hopscotching chefs, it seems to be a feat for any Dallas restaurant to maintain one chef, much less a team of two head chefs for over four years,” Wynne said in a press release.

Up on Knox is expected to make its debut in early fall, likely sometime around September.
