Perle on Maple, a new French eatery with a Chopped alum at the helm, has officially opened its doors inside the Stoneleigh hotel.
The restaurant is part of an extensive remap at the historic hotel, including a renovation of the 11th and 12th floor penthouse and Perle on Maple, which occupies a space on the ground floor. According to a press release, the restaurant features midcentury modern baroque styling from Studio 11 Design, and diners will find an outdoor patio with a fire pit, indoor bar and lounge, plus a dining room decked out in gold leaf, black steel, and white brick with navy banquettes.
As far as the kitchen is concerned, Executive Chef Wade Burch, who worked his way onto Food Network’s Chopped Champions after winning Chopped, will be offering “bistro classics with a Texas twist,” made with ingredients from local farms. Dishes include duck confit pancakes, Bandera quail wrapped in bacon with white bean cassoulet, a striped bass trucked in daily from the Silver Streak Farms in El Camp, Texas, plus the signature Duroc pork served with spinach, grain mustard, and Calvados apples. A native Texan, Burch logged time at the Plaza Hotel in New York, the Pan Pacific Hotel in San Francisco, and the Hotel Crescent Court in Dallas, among other high-profile gigs before landing at Perle.
Perle on Maple opened on Thursday, May 17, and will operate seven days a week from 6:30 a.m. to 10 a.m. for breakfast, 11 a.m. to 2 p.m. for lunch, and 5 p.m. to 10 p.m. for dinner.
