Plano’s two-year-old hot pot destination Chubby Cattle gets a new life this week as a rebranded restaurant that throws all-you-can-eat sushi into the mix.

Now called Rolls by Chubby Cattle, the shopping center eatery at 2001 Coit Road will add nigiri and rolls moving along a conveyor belt to the menu. Unlimited hot pot offerings will also become a roving affair, featuring ingredients diners can pluck off an automated train. The opening date is set for Friday, October 18.

Chubby Cattle owner Hai Bin Yang, who hails from Inner Mongolia in China, originally developed the restaurant as an attempt to create “the most authentic hot pot experience in the USA.” “After taking the community’s feedback on Chubby Cattle, we decided to reopen a completely new restaurant—new concept, new staff, new menu, new experience,” according to a PR rep.

The Chubby chain’s Denver location, which debuted in early 2018, also recently flipped to Rolls by Chubby Cattle that includes DIY ramen and A5 wagyu sliding by on a train.
