Vegan Tacos and Margaritas Await at Uptown’s New Fast-Casual Mexican Eatery

Toluca Organic, the anticipated fast-casual eatery from Southpaw’s Grill co-owner TJ Frank, has opened in Uptown.

The new vegan Tex-Mex destination announced its arrival inside the Gables Villa Rossa building at 2600 Cedar Springs Road on Facebook last week, with a menu that boasts vegetarian, gluten-free, vegan, and organic “modern Mexican” dishes. Think tacos stuffed with spicy vegan refried beans; a kale-quinoa salad topped with Tajin-dusted chickpeas; and vegan “barbacoa” or chorizo.

Other protein options like carne asada, verde chicken, mojo ahi tuna, chipotle tofu, and crispy avocado can be topped with sauces made in-house daily, like avocado fresca (avocado, lime, vegan crema, and cilantro), pineapple salsa, fire-roasted jalapeño ranch, and queso oaxaca. Here’s a look at the opening menu:

The colorful setup features lime green stools saddling up to a black-and-white tiled bar, where patrons can find organic beers and wines and tequila cocktails. Local Holy Kombucha comes in bottle and draft form, and is mixed into seasonal cocktails.
