Celebrity Chef Curtis Stone Will Open a Dallas Restaurant With Le Bilboquet’s Owner

The project from Stone and his brother Luke will channel their Hollywood hotspot Gwen

TV food show fixture Curtis Stone has Dallas in his sights. The head judge of Top Chef Junior and his brother Luke Stone are teaming up with restaurateur Stephan Courseau of Le Bilboquet and Up On Knox for a new Dallas restaurant, set to open later this year.

The Stone brothers are behind two critically acclaimed restaurants in Los Angeles, and the plan is to channel their luxe Hollywood spot Gwen Butcher Shop & Restaurant with the new project with Courseau in the former Villa O space at 4514 Travis Street, right next to Le Bilboquet. (That space was originally intended to be a Brazilian-inspired restaurant, as Eater reported last year). Brooklyn-based GRT Architects are in charge of the design.

Like Gwen, the Stones’ restaurant in Dallas will include a butcher shop and cooking techniques using a live fire. The name of the new project is still under wraps. A press release reads: “The Stones are eager to partner with Courseau and bring their signature Aussie touch to a city that knows its meat.”
