Chef John Tesar has officially opened the doors at Knife Butcher, a brand new butcher shop that completes his meaty trifecta of establishments at the Shops at Willow Bend in Plano.
The doors at Knife Butcher officially opened this week inside the Plano mall, right in between Tesar’s steakhouse Knife and fast-casual spot Knife Burger. All of the beef at the Butcher is sourced from Harwood’s Heartbrand Ranch, known for its Akaushi beef, or 44 Farms in Cameron, which has been a favorite purveyor of Tesar’s since he first debuted Knife.
Home cooks looking to splurge on a fancy steak will find bone-in ribeyes aged for a minimum of 45 days, along with the super-funky 240-day dry aged option. Hot dogs, ground beef, and bacon will also be on offer, along with accoutrements straight from the restaurant like Knife’s famed bacon jam and pimiento cheese. In addition to the edible options, the shop will also retail fancy Yeti coolers, and, of course, Tesar’s 2017 cookbook Knife: Texas Steakhouse Meals at Home.
Knife Butcher is open daily from 11 a.m. to 10 p.m.
