Dallas restaurateur Stephan Courseau and celeb chef Curtis Stone’s head-turning Knox Avenue restaurant serves up top-notch Australian beef on white tablecloths, but soon diners will be able to buy steaks to cook at home. Georgie by Curtis Stone’s in-house butcher shop is opening soon (a press release states the opening is slated for early March).
The restaurateurs tapped Mike Lawson to lead G Butcher Shop. His resume includes heading up the cured program at Oak Cliff’s Macellaio and serving as executive sous chef for both Gemma and Sachet.
“The G Butcher Shop is committed to provide the highest quality meats that have been brought tomarket in a manner that is in line with our principals,” Courseau said in a press release. “Our in-house butcher, Mike Lawson, is known for his passion and mastery of butchery, and is part of a movement known as‘ethical’ butchering.”
Cuts of meat aren’t the only thing on offer here. The butcher shop will also double as a sandwich shop at lunch, and a breakfast spot with fresh-squeezed juice and pastries from its sister restaurant Up On Know. Dine in with counter and patio seating, or grab prepared foods to go, like rotisserie chicken, charcuterie, and terrines.
G Butcher Shop’s hours of operation begin at 8 a.m. Monday through Friday for breakfast, from 11 a.m. to 3 p.m. for sandwich service and for retail until 6 p.m. On Saturday and Sunday, the shop will be open from 11 a.m. to 6 pm.
