A New Pizzeria Debuts at Trinity Groves

Holy Crust, a new pizza joint in which pizzas are constructed using a creative and unusual method, is opening next week in Trinity Grove.

The restaurant, at 3011 Gulden Lane, is the latest work from restaurateur Phil Romano, founder of chains like Fuddruckers and Romano’s Macaroni Grill. Holy Crust will officially open Thursday, August 6, but starting Monday, Romano will be offering diners a chance to preview his pies at half off.

The pizzas at Holy Crust are inspired by pies Romano’s mother used to make, according to a press release. Instead of the usual method of baking dough, sauce and toppings all together, chefs at Holy Crust will first sauté the toppings, then add them to the pizza, where the warmth of the toppings will help melt the cheese. After that, the pies go in the oven.

Holy Crust will feature 16 pizzas, including standard toppings like pepperoni alongside more creative options like avocado and egg. There’s also a shrimp cacio e pepe pizza, topped with spinach and alfredo sauce. For those who aren’t feeling pizza, find a sandwich stuffed with mild Italian sausage that’s smothered in sauteed vegetables.

The beverage menu will include a “wine honor system” in which diners can pour their own glasses from a choice of red wine, white wine or rosé jugs on each table. The bar will also include classic Italian aperitifs and digestifs like Negronis, Aperol spritz and house-made limoncello.

Holy Crust will offer take-out orders, which can be placed on the restaurant’s website. The menu will also be available through delivery apps including UberEats, Doordash and Grubhub. Regular hours will be 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. to 10 p.m. Friday and Saturday. A limited number of spots are available for the preview starting August 3.
