Hatch chili pepper season is in full swing, and to celebrate this crop of spicy green peppers from New Mexico, places across Dallas are spiking burgers, queso, pizza, and more with the fiery chiles.

Hatch chiles range from mild and slightly sweet to quite spicy, which means that it makes for a particularly versatile ingredient. Act quickly, though — Hatch season only runs from early August through the end of September, so there’s no time like the present to check out one of these Hatch enhanced dishes.
