Sorry to be the bearer of bad news, but summer isn’t anywhere close to being finished in Dallas. With high temps in the forecast for at least the next month, it’s important to find creative and delicious ways to cool off. And summer-y desserts should be high on the list.

These icy, sweet, and sometimes boozy treats will help regulate the internal thermometer and surviving until the end of summer. Think of it as a reward for getting through yet another 100+ degree day.

It’s coppe season once again at Eataly and this year the team dreamed up a new delight: the pesca melba coppe. This Italian sundae-esque dish made with gelato features white peach sorbetto and fior de latte (that’s literally translated to flower milk, but means best quality milk) gelato that is topped with caramel, peaches, and candied pecans.

Strawberry Key Lime Pie is new on the menu for summer, combining macerated strawberries and micro basil to the housemade graham cracker crust and its toasted meringue topping. And we didn’t even get to the key lime pie part yet.

There are numerous cold bites worth trying this summer at Kate Wesier’s new chocolate and wine shop in Trinity Groves, but the frozen cheesecake is at the top of the list. It’s got frozen vanilla bean cheesecake on a stick that is dipped in 72 percent Valrhona chocolate. If that’s not indulgent enough, add-on salted caramel sauce, strawberry sauce, or toasted pecans. Or all three — why not?
